What is Verjuice?

Verjuice (French verjus = green juice) is the juice of sour, green grapes, used instead of lemon or vinegar as a flavour enhancing ingredient in cuisine. The sourness of Verjuice is much milder than that of vinegar and its scent much more fragrant than that of lemon.

Cooking with Verjuice

Verjuice can be used as a marinade or sauce base for poultry, meat, fisch and seafood and is also a delicious ingredient in salad dressings, especially for green leaf salads.

Verjuice as a drink

A dash of Verjuice makes soda fruity and tasty and its well tolerated acidity makes it a wonderful ingredient in cocktails.

How Verjuice is made

The grapes used to make Verjuice are harvested in summer, when they have not yet produced any sugar. Harvesting is manual work, so technical requirements are high while the output is small – but the delicious taste of Verjuice makes the process worth doing.

History of Verjuice

Verjuice was already well known in ancient Europe more than 2000 years ago and during the Middle Ages as a delicious and healthy cooking ingredient as well as a powerful medicine.

Several ancient scientists such as Dioscurides, Plinius the Elder and Cornelius Celsus described the disinfecting, astringent and healing effects of Verjuice (Lat. omphacium) on the entire digestive system including mouth and throat.

Verjuice used to be a very popular cooking ingredient during the late Middle Ages, however when lemons became better known and more widespread, Verjuice disappeared from European kitchens.

The Medieval physicians of the Arabic World also worshiped Verjuice (Arabic: hisrim) as a healthy medicine and food.
